Ingredients

4 beef tenderloin steaks, trimmed (5 ounce filet mignon steaks, 1 ½ inch thick)

Salt

Fresh-cracked black pepper

Olive oil

⅓ cup dry red wine

2 tbsp seedless blackberry jam

⅓ cup beef stock

2 tbsp butter

¾ cup blackberries

½ cup blueberries

 

Rub steaks with salt and pepper, evenly coating both sides. In a large skillet, add oil and bring to medium-high heat. Cook steaks until desired doneness, turning once. Remove from the skillet and deglaze with red wine, turning the heat down to medium. Add jam and stock and whisk until blended. Bring to boil then reduce heat to low, simmering until the liquid decreases to half, about 2 minutes. Melt butter and add berries, stirring gently until heated through. Pour over steaks, and serve with a glass of Levendi 2019 Legacy Cabernet Sauvignon.
