A Memorable Main

For an unforgettable entrée that’s sure to become a year-round favorite, look no further than a delectable beef tenderloin topped with blackberry sauce. Simple in its construction yet elegant in its execution, this recipe is sure to steal the spotlight at any holiday get-together. For an elevated dining experience, consider bringing along a bottle of Levendi’s 2019 Legacy Cabernet Sauvignon. With a plush, layered mouthfeel electric with plum, black cherry, and oak, this wine mingles effortlessly with the freshness of the blackberry and blueberry of the sauce, and the structured tannins play with the savory salt-and-pepper meat in a delightful dance. Perfect for an intimate dinner party or a romantic evening for two.

4 beef tenderloin steaks, trimmed (5 ounce filet mignon steaks, 1 ½ inch thick)

Fresh-cracked black pepper

Olive oil

⅓ cup dry red wine

2 tbsp seedless blackberry jam

⅓ cup beef stock

2 tbsp butter

¾ cup blackberries

½ cup blueberries

Rub steaks with salt and pepper, evenly coating both sides. In a large skillet, add oil and bring to medium-high heat. Cook steaks until desired doneness, turning once. Remove from the skillet and deglaze with red wine, turning the heat down to medium. Add jam and stock and whisk until blended. Bring to boil then reduce heat to low, simmering until the liquid decreases to half, about 2 minutes. Melt butter and add berries, stirring gently until heated through. Pour over steaks, and serve with a glass of Levendi 2019 Legacy Cabernet Sauvignon.
