A Romantic Recipe for Two

Meatloaf Ingredients

1 lb lean ground beef

8 oz cremini or baby bella mushrooms, diced

½ yellow or sweet onion, minced

1 egg

½ cup bread crumbs, fresh or panko

1 packet of onion soup mix (dry)

2 Tbsp ketchup

1 Tbsp Worcestershire

1 tsp black pepper

1 tsp salt

1 tsp red pepper flakes

1 tsp oregano

1 tsp basil

 

Preparation

Preheat the oven to 350 F. Beat egg and combine with all liquid ingredients together. Add to ground beef and mix well with your hands. Add breadcrumbs, onions, onion soup mix, and dry spices and keep mixing until no longer wet. Form into a loaf in a baking pan leaving space on all sides. Flatten the top or leave a slight indent. Bake at 350 F for 40 minutes.

 

Glaze Ingredients

2 Tbsp of the minced onion, saved from before

½ cup ketchup

1 Tbsp Worcestershire 

1 Tbsp brown sugar

1 pinch salt

 

In a small pan on medium-low heat, saute onion for a few minutes, adding salt to bring out the sweetness. Add ketchup, Worcestershire, and sugar mixing thoroughly until sauce becomes viscous. Add salt and sugar as needed, to taste. Remove from heat and set aside.

 

Finish

Remove meatloaf from the oven and carefully remove excess oil. Spread glaze on top and return to the oven. Turn heat to 450 F and bake or broil for about 5-7 minutes, watching carefully for the glaze to just start to blacken. Remove from the oven, let cool, and enjoy.
